Ingredients You’ll Need
Alright, here’s what you’ll need to make this avocado cilantro lime taco salad dressing.
Avocado – this provides the beautiful green color of this dressing. It also contributes healthy fats, fiber, and lots of vitamins and minerals. Choose a ripe avocado that is firm but has a little bit of give when you squeeze it. You don’t want it to be too soft or too hard though.
Cilantro – another star ingredient of this cilantro lime avocado dressing. I use about one bunch of cilantro for this recipe and just roughly pull the leaves off from the stems. The blender will do the rest!
Limes – like the name implies, this is one of the star trio of ingredients in this avocado cilantro lime dressing. This citrus fruit adds an acidic flavor and zest to this dressing recipe that just blends perfectly with the cilantro. You can use fresh lime juice or bottled lime juice in this recipe.
Greek Yogurt – the yogurt addition increases the protein content and helps make this avocado cilantro lime dressing a much creamier consistency. I use full-fat plain Greek yogurt in these types of recipes for a more creamy texture but you can also substitute non-fat Greek yogurt if that’s what you have on hand. Sour cream is another substitute that works well, however, it doesn’t have the same protein content as Greek yogurt does.
Olive Oil – avocado oil can easily be substituted for olive oil in this recipe. They’re both great sources of healthy monounsaturated fats. This helps to thin the dressing recipe out a bit so that it’s easier to pour. You can add more olive oil if you prefer it to be even more liquidy.
Honey – a little bit of sweetness to balance out the flavor dimension. You can adjust the amount to suit your preferences or omit this entirely if you want.
Salt – season to taste with sea salt.
How To Make It
I know that it may have seemed like a lot of ingredients listed above, but I promise, this is so simple to make and definitely worth the small time investment!
All you’re going to do is remove the avocado flesh from the skin and remove the pit. I like using an avocado slicer to do this. Then roughly pull the cilantro leaves off of the stems; discard the stems. If you’re using whole limes, you’ll want to squeeze the juice out of them – I love using my recent favorite purchase: a lemon squeezer (seriously, it’s a totally unnecessary kitchen gadget that makes juicing lemons or limes way more enjoyable).
Combine all of the ingredients in a high speed blender or food processor. Blend on high until the mixture is smooth.
When I make a recipe like this, I’m typically too lazy to get my blender out (and clean it up after) so I just use my immersion blender in a bowl to mix everything together. It works out great!
Variations & Substitutions
- Add this dressing to my favorite taco salad recipe or serve it with tacos, quesadillas, burrito bowls, or your other favorite Mexican style dishes.
- Swap avocado oil for the olive oil.
- Adjust the amount of honey to suit your taste preferences or omit entirely.
- Use bottled lime juice instead of fresh limes (about 3 tablespoons for this recipe).
- Use full-fat or non-fat Greek yogurt, or substitute for sour cream.
- Make it dairy free by substituting a dairy-free Greek yogurt
